Cake staging SOP
Correct cake staging is important. The best cakes will not taste well if not staged properly. Cake has a lifecycle. Stage the cake at room temperature to allow the cake acclimiatize. This allows the sponge to soften and the cream to release it’s flavors. Putting the cake in a chiller 5-8 degree C prolongs it’s life. Typical high sugar cake has a lifespan of 3 days in the chiller. Gobi’s cakes can last up to 5 days without much degradation due to it’s low sugar content (<10 p=""> The chiller should be maintain between 5-8 deg C. A small cup of water shoud be placed in the cake display so that the cake don’t dry out.
